Today I've been in a cooking mood and have actually had the time to cook, yay! I've had a banana and Enjoy Life chocolate chip omelet, plantains with guacamole, and clean crab cakes, so far everything has been a winner! Check out the recipes below, all 3 are soy, dairy and gluten free!
Banana and Enjoy Life Chocolate Chip Omelet:
Mix all ingredients together except for the chocolate chips. Pour in a oil coated pan, I use coconut oil, and cook on medium heat. Let omelet cook for a couple minutes, just enough so you can easily flip without a mess, before flipping omelet sprinkle chips onto the top of the omelet and then flip. Cook another minute or so until omelet is set.
Garlic and Ginger Plantains:
- 3 ripe plantains
- 2 tbsp coconut oil
- Seasoning - garlic, salt, ginger
Clean Crab Cakes:
Place all ingredients in a bowl, mix well, then form into pattys. Fry in pan on medium heat in coconut oil, flipping a couple times until cooked thoroughly on both sides. Enjoy!
